Sweet Potato Quesadillas


Quesadillas, are a great solution to a fuss free meal, and a clever way to use leftovers, so keep some tortillas in the pantry. I prefer the large ones.


For the sweet potato mash up, preheat oven at 200 degrees, and place the sweet potato. skin on on a tray. Bake for at least 90 minutes, turning it upside down after the first 45 minutes. Check it is easily pierced with a knife. Allow to cool and peel skin off. Mash up flesh with a fork and add to your liking:


  • Red Pepper, finely diced

  • Spring Onions, finely sliced

  • Coriander leaves, finely cut

  • Lime zest and juice

  • Salt

  • Pepper


Fill half of each tortilla with the mash and fold the other half over. Heat a non stick pan over medium heat and fit the half mooned shaped tortilla in. Leave it until coloured deeply but not burnt, 4 - 5 few minutes, it will depend on the heat and the pan. Using a spatula and your hands, flip over and repeat.


Remove on a cutting board, and cut in 4, or more. I like to serve this with a refreshing green salad.
