Stuffed Avocado



No cooking required in this amazing keto friendly snack:


Pit and peel the avocado, and stuff it with cauliflower rice (just blend it, or finely chop it), a ricotta type cheese (in Greece Anthoyro or Manouri work perfectly), toasted pine nuts, and pomegranate seeds.
