Peanut Butter Rice Noodles with Cucumber and Sesame Seeds



For the sauce, in a bowl whisk slowly and patiently (it will smoothen out eventually):


· Peanut Butter 2 tbsp

· Sesame Oil 2 tbsp

· Lime Juice 1,5 tbsp

· Soy 1,5 tbsp

· Maple 1 tbsp

· Ginger 2 cm piece grated

· Garlic 1 clove grated


For the rice noodles (half a packet, for the given quantities of sauce):


Soak in boiled water for at least 30 minutes, and up to an hour, depending on the brand. Check with your hands if they have softened and add more boiled water accordingly. Refresh under cold water and keep in cold water if saving for future use.

Use a little bit of the water in which you soaked the noodles to thin out the sauce in a big bowl, before tossing them in, and stir well to coat them properly.


Garnishes (indicative quantities according to the above):


· Spring onion, thinly sliced, 3 stalks

· Thinly shaved cucumber, 1 small piece

· Coriander leaves, half a cup

· Chili flakes, 1 tsp

· Toasted Sesame Seeds, 1 tbsp
