For the sauce, in a bowl whisk slowly and patiently (it will smoothen out eventually):
Peanut Butter 2 tbsp
Sesame Oil 2 tbsp
Lime Juice 1,5 tbsp
Soy 1,5 tbsp
Maple 1 tbsp
Ginger 2 cm piece grated
Garlic 1 clove grated
Soak the:
Rice noodles, 1/2 pack
in water that has just boiled for at least 30 minutes, and up to an hour, depending on the brand. Check with your hands if they have softened and add more boiled water accordingly. If using later keep in cold water in the fridge.
Use a little bit of the water in which you soaked the noodles to thin out the sauce in a big bowl, before tossing them in, and stir well to coat them properly and garnish with:
Spring onion, thinly sliced, 3 stalks
Thinly shaved cucumber, 1 small piece
Coriander leaves, half a cup
Chili flakes, 1 tsp
Toasted Sesame Seeds, 1 tbsp
