Peanut Butter Rice Noodles with Cucumber and Sesame Seeds



For the sauce, in a bowl whisk slowly and patiently (it will smoothen out eventually):

  • Peanut Butter 2 tbsp

  • Sesame Oil 2 tbsp

  • Lime Juice 1,5 tbsp

  • Soy 1,5 tbsp

  • Maple 1 tbsp

  • Ginger 2 cm piece grated

  • Garlic 1 clove grated

Soak the:

  • Rice noodles, 1/2 pack

in water that has just boiled for at least 30 minutes, and up to an hour, depending on the brand. Check with your hands if they have softened and add more boiled water accordingly. If using later keep in cold water in the fridge.


Use a little bit of the water in which you soaked the noodles to thin out the sauce in a big bowl, before tossing them in, and stir well to coat them properly and garnish with:

  • Spring onion, thinly sliced, 3 stalks

  • Thinly shaved cucumber, 1 small piece

  • Coriander leaves, half a cup

  • Chili flakes, 1 tsp

  • Toasted Sesame Seeds, 1 tbsp
