Egg Salad with Avocado, Radishes, Cucumber, Smoked Trout and Horseradish Mayo


This is a very mingled, refreshing, nutritious, surprising bowl of food. The only cooking involved is the boiling of the eggs, the rest is just shopping and mixing. It will work also great as a sandwich or tortilla filling.


In a bowl mix:

  • Eggs, hard boiled and chopped, 3 pcs

  • Avocado, in small cubes, 1 pc

  • Radishes, in small cubes, 3 large pcs

  • Cucumber, skin on, in small cubes, 1 medium pc

  • Spring Onions, white and green parts, thinly cut, 4 pcs

  • Red Pepper, in small cubes, 1 pc

  • Smoked Trout fillet, finely cut, 2 pcs

  • Parsley, finely cut, 2 tbsp

  • Sumac, 1/2 tbsp

In another bowl whisk together:

  • Mayonnaise, 1/2 cup

  • Horseradish paste, 2 tbsp

  • Lemon Juice or Vinegar, 1/2 tsp

  • Salt, to taste

and dress the salad by gently stirring everything together with a spoon. It should be just coated, do not overdo it with the dressing. Garnish with some more sumac and enjoy!
