And it is testament to how interesting steamed broccoli can become with the proper additions. In this case crab surimi sticks, easy to always have in the freezer, chilli, onion, a fresh herb of your choice, and a dressing with asian pantry staples that is always a hit. There is very little preparation involved, the cooking of the broccoli, the cutting of the other ingredients and the making of the sauce.

In a small jar shake the dressing ingredients:

  • Lime juice, from 2 pcs, roughly 2 tbsp

  • FIsh sauce, 2 tbsp

  • Soy sauce, 1 tsp

  • Sesame Oil, 1tsp

Put some water in a pot used for steaming, and when it starts to boil, steam:

  • Broccoli, the whole head - cut the base straight so that it can stand up in whatever steamer basket you are using. This way the stem will have the time it needs to cook, but the florets will remain bright and bitty.

for about 15 minutes. Check with the tip of a knife that the stem is soft enough for it to push through. Allow it to cool, separate the florets, breaking up the bigger ones, and cut the stem in bite size pieces. Place in a bowl. Add:

  • Red Chili, 1 pc, deseeded and thinly cut

  • Onion, 1/2 pc, cut in as small cubes as possible

  • Surimi, 8 sticks, in small slices

  • Fresh Coriander, or other fresh herb of choice, 1/2 cup

Mix everything together and dress with the sauce.
