Beef Patty with Tomato Salsa and Tahini Sauce

I love a naked "burger", but since the beef is sitting here alone in plain sight some more flavour has to go in the actual patty.

For the patty, mix well in a bowl:

  • Minced beef of your choice, 1 kg

  • Onion, 1 small pc, very finely cut and lightly sweated in a pan just to soften and allowed to drain

  • Rolled Oats, 1/2 cup

  • Tomato, 2 pc grated

  • Mustard, 1 tbsp

  • Ketchup, 1 tbsp

  • Worcestershire Sauce, 1 tsp

  • Parsley 1/2 cup

  • Dried Oregano, 1 tbsp

  • Salt, Pepper

Use wet hands to shape the patties and put them in the fridge for at least 30 minutes before cooking them. Store in a tray in between parchment paper.

Heat a non-stick pan well. Oil and salt the patties, and cook for 3 minutes on each side to give them a nice, coloured crust, then cover pan, lower heat and cook to your liking, or finish cooking in the oven, convection mode, at 180 degrees C, to the wellness your prefer.

For the salsa, mix in a bowl:

  • Onion, 1/4 pc very thinly cut

  • Tomatoes, 2 small pcs, de-seeded and chopped in very small dices

  • Tabasco, a few drops to your liking

  • Fresh Coriander, finely chopped 1/2 cup

  • Salt

For the sauce whisk patiently until smooth

  • Tahini, stirred well, 3 tbsp

  • Lemon Juice, 2 tbsp

  • Water, 2 tbsp initially, plus more if needed

  • Olive Oil, 2 tbsp

  • Salt
