This is wonderfully light and very simple pasta recipe.
For 2 generous portions, boil
250 gr of regular pasta in plenty of boiling, salted water, for approximately 8 minutes.
Drain and refresh under cold water. In a pan with quite a bit of oil lightly fry:
Zucchini, 4 small pieces, cut in 1,5 cm thick rounds
When they start to soften lower heat and add
Garlic, 3 cloves, finely chopped
Lemon zest, 1 tbsp
Cook for 2 more minutes turn heat off and the pasta and
Freshly ground black pepper, to taste
Red pepper flakes, to taste
Fresh herbs, at least 1/2 cup (parsley, thyme, chervil or a mixture)
