Pasta with Zucchini, Garlic, and fresh Herbs




This is wonderfully light and very simple pasta recipe.


For 2 generous portions, boil


  • 250 gr of regular pasta in plenty of boiling, salted water, for approximately 8 minutes.


Drain and refresh under cold water. In a pan with quite a bit of oil lightly fry:


  • Zucchini, 4 small pieces, cut in 1,5 cm thick rounds


When they start to soften lower heat and add


  • Garlic, 3 cloves, finely chopped

  • Lemon zest, 1 tbsp


Cook for 2 more minutes turn heat off and the pasta and


  • Freshly ground black pepper, to taste

  • Red pepper flakes, to taste

  • Fresh herbs, at least 1/2 cup (parsley, thyme, chervil or a mixture)
