Cauliflower and Pepper Quesadillas


Only two ingredients in this filling and yet nothing is missing.


Place a non stick pan on very high heat and allow it to start smoking, then add:

  • Cauliflower, in very small florets, or thin slices

Turn around to get it evenly charred on all sides, and soften it. Remove on a plate, turn heat down and allow then pan to cool slightly. Then add some olive oil, not a lot, enough to cover the surface. Add:

  • Peppers, red, yellow, orange, washed, deseeded and sliced in thin stripes.

Also add some salt, and allow the peppers to sweat and soften, a few minutes. Return cauliflower to the pan, mix everything together and add:

  • Lemon juice, a few drops

  • Parsley, thinly cut

  • Black pepper, freshly ground

  • Salt, to taste

Prepare the tortillas by placing the filling on half and folding the other half over. Cook in a dry, very hot, non-stick pan for a few minutes on each side, just to give it some colour.


Note: Use any grated cheese in the filling for a non-vegan option. I would probably go for mozzarella or even better a smoked yellow cheese.
